Very sstisfied with the plain gingerbread cookies. Saving the chocolate gingerbreads for a meeting celebrating a Finnish history research project!

I bought a box of these on a whim while in store recently. I hadn’t seen the combination of ginger and peppermint before and wanted to try them. They completely exceeded my expectations! These are light, wafer-thin crisps with just the right coating of peppermint infused chocolate on one side. Maybe it wouldn’t be for everyone, but I LOVED the ginger and peppermint. It took A LOT of restraint to not eat the whole box. When my 8yr old helped herself and also loved them, I realized I might need to order more online (and hide them for me!!) Seasonal comfort in a box!
